Zucchini Relish (Jeanette's Recipe)
Grind the following
- 10 cups of Zucchini
- 4 cups of onions (about 4 big onions)
- 1 red pepper
- 1 green pepper
Add 5 T. salt to the ground things
Let stand overnight
Next morning Drain and rinse with cold water-
drain off the water
..... Add the following:
- 2 1/4 cups of cider vinegar
- 1 T. nutmeg
- 5 Cups of sugar
- 1 T dried mustard
- 1 T. Turmeric
- 1 T. corn starch
- 2T celery seed
- 1/2 t. pepper
Cook all for 30 minutes.
Pour it into clean jars while at boiling temperature
Yield 6 1/2 pints
